What's a marinade?

Let’s talk about some of our marinated items.

I know some of you have tried some of our specialty items and loved them, and others have heard of them. We make several different types of marinated items. During the summer months, we have marinated chicken and marinated sirloin tips. Let me tell you about some of them.

Chicken Pomodoro – Our take on Italian chicken, this marinated chicken is packed with flavor. The marinade is made up of crushed tomatoes, herbs, spices, and a bit of vinegar. The flavors you’ll encounter most will be from the tomatoes, basil, and oregano. It can be cooked on the grill on medium heat, or it can be cooked in a pan on the stove to be served with pasta or cut up in a salad.

Oriental Chicken – This marinade is made up from ginger, teriyaki sauce, vinegar, fresh lemon juice, garlic, and crushed red pepper. It is a great, refreshing taste that captures flavors used in some oriental cooking. This chicken can be grilled on medium heat.

Sweet Onion Chicken/Sweet Onion Sirloin Tips – Our Sweet Onion Marinade is made up of fresh sweet Vidalia onions, soy sauce, sugar, and other spices. The taste of the Vidalia onions shines through in this wonderful marinade. Paired with the soy sauce, it turns ordinary beef or chicken into a tasty meal.

Italian Chicken/Italian Sirloin Tips – This is a traditional marinade that is vinegar based, much like a traditional Italian dressing. With hints of tomato, garlic, onion, lemon, and other spices, this marinade stands out as an extremely bold flavor. Great when tossed in a salad.

Chicken Teriyaki/Pork Teriyaki – Chicken strips coated in a delicious teriyaki sauce that is easy to enjoy. Also, the same sauce is used on thin cut pork cutlets. It is easy to be nervous when cooking pork, but our thinly cut pork cutlets will easily impress you with how quickly they cook, and how great they taste.

Beef Teriyaki – A different teriyaki sauce is used to marinate our sirloin tips. We use a sauce that is infused with a blend of spices. It adds much flavor that pairs wonderfully with beef. Try some of these strips on your grill, and you will not be disappointed.

Jamaican Jerk Chicken – With an almost endless list of ingredients, this marinade has a very interesting flavor. Ground peppers give it some heat while other ingredients are there to balance that heat out a little.

Primal cuts and bundles

Hello Friends,

Let me tell you about a couple of great ways to save some money, and get great items this summer at Bonk’s Market.

There are a few different ways to combat rising costs of meat this summer. Most of these ideas deal with buying things in a little bit larger quantity than normal, but I wouldn’t consider it “bulk” exactly.

The best way of buying something that you really enjoy having is to purchase what’s known as a primal cut. A primal cut is a large piece of meat which usually gets broken down into several different items. An example of that would be a piece of meat called the Boneless Top Butt.

The Boneless Top Butt is the piece of meat from which we get our New York Sirloin Steaks, Short Cut Rump Steaks, a bit of meat for hamburg, and possibly a bit of meat for stir fry. If you were to get a whole Boneless Top Butt, you could have it cut up exactly as you want it. If you don’t care for the Short Cut Rump steaks, or the stir fry beef, you can get a bit more hamburg. Your New York Sirloin steaks can be cut as thick or thin as you’d like, and everything can be packaged as you wish.

Now, here’s the best part. Instead of paying 7.99/lb for your New York Sirloin steaks and 4.39/lb for your hamburg, you’ll pay somewhere around 4.09/lb(price varies week –to-week) for all of it! The total amount of the items you will get varies, but it will be somewhere around 10 lbs. This is one of the smaller primal cuts of meat out there. Some others can be in the 20 – 30 lb range.

The point is that you can get great quality items packaged at your request for a much lower cost than traditional “over the case” purchasing.

Another great way to get some high quality items is to order a small meat bundle. We have meat bundles starting at just $33.00. They can range up to $250.00 for the largest, but ordering a small meat bundle can substantially reduce your costs. The best part is that we have two great bundle sheets to choose from. You can mix and match your own bundle, or select one of a number of bundles that we have written out already.

You don’t have to get an extremely large order just because the word “bundle” is associated with it. Also, our bundles are also customized to you. Our mix and match bundles have items that are packaged in smaller quantities so that you’re not stuck in the kitchen repackaging your order for hours. Our custom fresh bundles are packaged at your request, so there is no work involved for you at all. That is part of the service we provide here.

What's a pig got to do with it?

Thanks for checking out our Bonksmarket.com blog! We hope that you have enjoyed using the website to its full capabilities.

I’d like to talk to you all today about a few different types of pork. I know some people that are a little bit intimidated by pork just because it never seems to come out just right. It’s either not cooked all the way through, or it’s overcooked and dried out. I’d like to give you just a few tips that I use when I’m cooking pork.

The first thing you have to consider when thinking about cooking pork is what type of cooking method you need to use. For example, something that comes from the pork loin, such as a center cut boneless pork chop, can be cooked in just minutes on the grill. However, something like a bone-in country style spare rib needs to be cooked a little bit longer and preferably in some sort of liquid.

That’s where we come in. When you’re in the mood for pork but don’t know just exactly what to buy, talk it over with us. Tell us how you plan on cooking your pork. We will tell you if the method you are using is appropriate for the piece of pork you are buying.

Another thing that you need to consider when buying a piece of pork is what piece of pork is going to have the best flavor for you. Some pieces of pork can taste much different than others. Much like the difference between white and dark meat chicken, these different flavors of pork may throw you for a loop if you aren’t exactly sure what you’re getting. Meat from the pork loin, for example, is typically lighter in color and much softer tasting. This is the type of meat you would get when ordering pork chops or a pork loin roast.

The last thing that you need to consider is….why aren’t you cooking pork more often? Pork is relatively inexpensive, it can be quite lean in some cuts, and it is so versatile in the different dishes that can be prepared with it. I hope that this short blurb has given you a bit of confidence. Preparing food can be a difficult task, and what I have found out is that the best way to learn more about it is to ask others!

Pork Chops

Hello Friends,

Here is a very easy and delicious meal for a family. It’s the kind of food I like to make on rainy, cold days. It’s something like a comfort food. What you’ll need:

  • Lean Loin Pork Chops (4-5pcs)
  • Ritz Crackers (The amount will depend on what consistency you’ll want)
  • 3 cups Chicken Stock/Chicken Broth
  • Salt/Pepper (To Taste)
  • Olive Oil
  • 1/2 cup Grated Parmesan/Romano Cheese
  • 3 teaspoons crushed garlic (or 3 cloves crushed)

First, you need to coat both sides of each pork chops with a bit of olive oil, then salt and pepper to taste. This will give them a nice crust on the outside.

Start heating up a skillet or fry pan over medium heat. Put about 3 tablespoons of olive oil in your pan, and add your garlic. Let the garlic sweat for 4-5 minutes. Then, turn the heat up nearly to high and toss in your pork chops. Now put your pork chops into the pan. Leave them on one side for 2 minutes, then flip them to the other side. Let this side crust for 2 minutes, as well.

After you’ve flipped them, it’s time to add the cheese. Coat the pork chops evenly, and let all of these ingredients set in the pan for another minute.

Place your ritz crackers into a plastic bag, and crush them down as much as you can. Leave them a little bigger if you don’t mind the texture of large cracker chunks.

Add the chicken broth/stock to the pan. Turn the heat down to medium-high, and let this all cook for another 4 minutes. After that, take your pork chops out. Let them stand covered loosely in tinfoil. Now you have a pan full of a homestyle “gravy”. To this you’ll add your ritz crackers.

Once the gravy comes to a boil, turn the heat down to medium, and let it simmer, while stirring, for another 3-4 minutes. If you’d like to thin out your gravy, you can add a little water. If you’d like to thicken your gravy, you can whisk is a small amount of flour.

You can serve these pork chops and gravy with roasted potatoes, mashed potatoes, green vegetables, or rice. Many side dishes can work well with these.
